I found a great recipe to use when we have a craving for some real good Italian food. I found this on the Allrecipes.com website. This will feed up to 4 persons.

Ingredients:

  • 2 tablespoon butter
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups chicken broth, divided
  • 2 cups heavy cream
  • 2 lbs. boneless, skinless chicken breast halves
  • Salt and pepper to taste
  • 3 tablespoons vegetable oil
  • 4 tablespoons fresh basil, chopped
  • 16 oz. fettuccini noodles

Chicken and Strawberry Salad

I recently saw a recipe on the back of Boar’s Head pamphlet at the grocery store. I thought it would be a quick light meal I could fix for my family and/or clients on a ski vacation. It only takes 15 minutes to prepare and my family loved them. Bonus: it is Gluten Free.  Servings: 4

Ingredients:

  • 6 cups of mixed greens
  • 8 slices of fully cooked bacon crumbled
  • 12 oz. of Boar’s Head EverRoast Chicken cut into large chunks
  • 1 ½ cups of sliced cucumber
  • 1 16 oz. container of strawberries sliced
  • 1 avocado chopped
  • ½ cup of Feta cheese crumbled
  • ½ cup of glazed almonds
  • ½ cup of Balsamic Vinaigrette or any dressing you choose

Instructions:

  • In a medium mixing bowl, add mixed greens, cucumber, strawberries, avocado, and glazed almonds.
  • Lightly toss ingredients in the medium mixing bowl.
  • Evenly place chicken, bacon, and cheese crumbles on top of salad.
  • When ready to serve, drizzle the vinaigrette or dressing of choice onto the salad and serve.

Anytime Chili

This is a great family recipe that I make throughout the year but is especially tasty during the cold winter months. It can feed up to six people. It goes great with spaghetti or rice or just in a bread bowl. It is very simple to make, and you can use a crock pot to do all the cooking. Prep time: 10 minutes. Cook time: 2 hours.

 

Ingredients:

  • 1-1 ½ lbs. ground beef
  • 1 can kidney beans rinsed/drained
  • 1 can chili beans
  • 1 can white beans rinsed/drained
  • 1 can diced tomatoes
  • 1 32 oz. bottle V-8 Juice
  • 1 medium size onion diced
  • 1 green pepper diced
  • 1 red pepper diced
  • 1 tbsp. chili powder
  • 1 tbsp. garlic salt
  • 1 tbsp. garlic pepper
  • 1 tsp. basil
  • Salt and pepper for taste

Instructions:

  • In a large skillet, cook beef on medium-high heat breaking into crumbles until brown, drain.
  • Put all ingredients in slow cooker. Cook covered on high for first hour and then turn to low stirring occasionally.
  • Serve over pasta or rice or in a bread bowl. ENJOY!

Steak with Blue Cheese Potatoes

I found a great recipe from foodnetwork.com to use when we have a small gathering of people. It can feed up to four people. It is very simple and is served with Blue Cheese Potatoes. Prep Time: 10 minutes. Cook Time: 30 minutes.

Ingredients:

  • 4 medium Russet potatoes
  • 1 tbs. extra-virgin olive oil, plus more for brushing
  • 1 1/2 -2 pounds of boneless top sirloin steak (1” thick or more)
  • Kosher salt and freshly ground pepper
  • 3 ounces of soft blue cheese (about ¾ of a cup)
  • 3 tbs. of sour cream
  • ¾ cup chopped fresh parsley, chives and/or scallions
  • 1 shallot, sliced or 2 tbs. diced red onion
  • ½ cup ruby port or red wine
  • 1 cup low-sodium beef broth
  • 3 tbs. cold unsalted butter

Directions:

  • Preheat oven to 425 degrees. Pierce potatoes with a fork, then microwave until easily pierced, but slightly firm in the center. Usually about 12 minutes. Brush potatoes with olive oil and bake directly on the oven rack until tender with crisp skins. About 10 minutes. Keep warm!
  • Season the steak with salt and pepper and rub in 1 tbs. of olive oil.
  • Mix the blue cheese, sour cream, and herbs in a bowl.
  • Heat a cast iron skillet over medium-high heat. Sprinkle the skillet with a ½ Tsp. of salt and drizzle lightly with olive oil, then add the steak and weigh it down with a heavy skillet.
  • Flip the steak, replace the top skillet and brown the other side for 3 minutes. Reduce the heat to low, remove the top skillet and cook 1 to 4 minutes more for medium rare. Transfer to a plate.
  • Return the skillet to medium-high, add the shallot and port (red wine) and boil until thickened or about 4 minutes. Stir in the broth and any juices from the steak and cook 5 minutes, then whisk in the butter.
  • Split open the baked potatoes and top with the blue cheese mixture.
  • Slice the steak and serve with the potatoes and sauce.

Roast Chicken with Fennel, Parsnips, and Scallions

I found a great recipe to use when we have a family gathering. It can feed up to six people. It is very simple and can be served with a Balsamic Berry Vinaigrette Salad. Prep Time: 20 minutes. Cook Time: 40 minutes.

Ingredients:

  • 3 tablespoons olive oil, divided
  • 1 4lb chicken
  • Kosher salt and freshly ground pepper
  • 1 fennel bulb, sliced lengthwise ½” thick
  • 2 large parsnips, peeled, sliced ½” thick on the diagonal
  • 1 bunch of scallions
  • 3 wide strips lemon zest
  • Lemon wedges (for serving)

Directions:

  • Preheat oven to 425 degrees. Heat 1 Tbsp. of oil in a large ovenproof skillet over medium-high. Season chicken inside and out with salt and pepper. Cook breast side down until a beautiful golden brown. Use tongs to gently rotate chicken, being careful not to tear the skin. Brown on all sides, 12-15 minutes in total. Transfer to plate for time being.
  • Toss fennel, parsnips, scallions, and lemon zest in skillet with remaining 2 Tbsp. of oil. Season with salt and pepper. Place chicken, breast side up, on top of the vegetables. Roast until an instant-read thermometer inserted into the thickest part of the chicken reads 165 degrees, usually around 35-40 minutes. (You can check doneness by cutting into the thigh at the joint. If the juices are clear, the bird is ready) Transfer bird to cutting board, let cool for 10 minutes before carving.
  • Serve chicken and vegetables with pan juices for spooning over and lemon wedges.

 

Balsamic Berry Vinaigrette Salad

 

Ingredients:

  • ¼ cup balsamic vinegar
  • 2 Tbsp. plain fat-free Greek yogurt
  • 1 Tbsp. sugar-free strawberry preserves
  • 1 ½ Tsp. olive oil
  • 1 Tsp. Dijon-style mustard
  • 1 clove of garlic, minced
  • ¼ Tsp. kosher salt
  • ¼ Tsp. black pepper
  • 4 cups of fresh baby spinach
  • 4 cups of romaine lettuce
  • 1 small Gala apple, thinly sliced
  • ½ cup crumble feta, blue or goat cheese
  • ½ cup of pomegranate seeds
  • ¼ cup of chopped walnuts

 

Directions:

  • For vinaigrette, in a small bowl, whisk together vinegar, yogurt, preserves, oil, mustard, garlic, salt and pepper.
  • In an extra-large bowl, combine spinach, romaine, apple, cheese, pomegranate seeds, and walnuts. Drizzle with half of the vinaigrette. Toss to coat. Pass the remainder around for anyone that needs more.

Cadillac Margarita and Moscow Mule

What better way to celebrate the coming of summer than to have some great drinks to make when you are here in Park City. One is an old-time favorite and the other is one that most restaurants have on their menu nowadays. Enjoy!!!

Cadillac Margarita:

Ingredients:
• 1 ½ – 3 ounces of Patron Tequila (or any brand that you desire)
• 1-2 ounces of Cointreau
• 1 ounce of
• 1-2 ounces of lime juice
• 3-4 ounces of sweet and sour mix
• 1-2 ounces of orange juice
• Lime wedges
• Margarita Salt if desired

Fill a cocktail shaker with ice, add the first 6 ingredients and shake all the ingredients. Empty into a tall 16 oz. glass and garnish with a lime.

Moscow Mule:

Ingredients:
• 1 ½ – 3 ounces of Ketel One or Titos Vodka (or any brand that you desire)
• 1-2 ounces of lime juice
• Mint leaves
• 6 ounces of Reeds Ginger Beer
• Lime wedges

Fill a copper cup with ice, add vodka, Ginger Beer, lime juice and stir ingredients. Garnish with a lime wedge and mint leaves.

BBQ Shredded Chicken

I found a great recipe to use when we have big family gatherings.  It can feed up to eight people. It is very simple and you can use a crock pot to do all the cooking while you head out to the slopes!

Ingredients:

  • 3 to 4 pounds of boneless, skinless chicken thighs and breasts.
  • 1 large onion, diced
  • 2 or more cloves of garlic, minced
  • 2 teaspoons of smoked paprika
  • 2 teaspoons of salt
  • Freshly ground black pepper
  • 1-1/2 cups of BBQ sauce, plus more when you serve it

Instructions:

  • Pour all the ingredients into a slow cooker (crock pot).
  • Cook for 5 to 7 hours on LOW.
  • If desired, you can lift out the chicken and reduce the sauce in separate pan on the stovetop.
  • Serve with buns, slaw, avocado and extra BBQ sauce on the side. Can be refrigerated for up to 5 days.

Rosemary Citrus Shrimp Tacos

I was recently looking for an easy, quick dinner I could fix for my family and I came across a delicious recipe for Shrimp Tacos on Melanie Makes. It only takes 15 minutes to prepare and my family loved them.

Ingredients:

  • 2 tablespoons olive oil
  • 1 pound of shrimp, peeled and deveined with tails removed
  • 4 oz. Robert Rothschild Farm Rosemary Citrus & Pepper Sauce
  • 8 flour tortillas
  • 9 oz. fresh cole slaw mix
  • 1 red pepper, cut into strips
  • 1 yellow pepper, cut into strips
  • 1 avocado, sliced

 

Instructions:

  • Large skillet, heat olive oil at medium heat, add shrimp in a single layer and cook for 2 minutes. Flip shrimp and cook for an additional 2 minutes.
  • Stir in 1 cup of Rosemary Citrus & Pepper Sauce and warm through. Remove from heat.
  • Assemble tacos by topping a tortilla with cole slaw, pepper strips, avocado slices, and shrimp.
  • Top with additional Rosemary Citrus & Pepper Sauce, if desired.

You are probably thinking, “after a day on the slopes with my family, who has time to cook?!!”

Well, if you are like most families who are on a budget and/or care about what their family eats, you know you are going to be doing some cooking on this ski vacation.

Let us help!

We’ve compiled some of the easiest, budget friendly recipes we could find that will feed your family without breaking the bank or breaking your back.  A lot of our picks come from the fact that you can make it ahead and/or get help from the kids to assemble.  Each lunch is easy to pack and bring with you in a backpack to avoid those high cost meals at the lodge.  Feel free to change it around, of course, but this will at least get you started.  We’ve even added a downloadable shopping list that you can send directly to us if you like it and want to use it just how we put it together.

Day 1
